It's also good for frango a passarinho, Brazilian-style fried chicken.
A couple of inches of the oil in a very tall pot (it bubbles up a lot when you deep fry with it), brought up to frying temp. Add walnut sized chunks of skinless chicken to the hot oil, then shortly after add a heaping handful of roughly chopped garlic to the oil. Take everything out just as the garlic starts to get brown and crispy. Season garlic and chicken by tossing with salt, chopped parsley, and lime juice. As a bonus, you'll have garlic-chicken flavored coconut oil to cook with afterwards.
It's so fucking good, I want to make some now just from talking about it. The cooking method predates the introduction of chickens by settlers; literally translated it means "chicken, bird style"
Fried bananas in coconut oil is awesome. Fry them when they're just on the side of too ripe, then either sprinkle with cinnamon or you can put some chili flakes and sea salt on it. it's awesome.
