A lot of it was introduced to the Scottish by the Romans (like haggis), the Scots just missed out on the Gallicization of Britain in the same way that other segregated/oppressed populations don't catch on to the newest fads and end up elevating dishes to symbols of national character, i.e. African Americans adoration of collard greens and black eyed peas and such like.
I'd love to make these. I want to eat these. I love old timey cuisine and charcuterie. Right now, I'm pressing a shooter's sandwich. I love this kind of stuff.
