I can still remember those old buckets. I loved the Hell out of Kentucky Fried Chicken when I was little.

I'm old enough to remember when places that weren't Kentucky Fried Chicken sold Kentucky Fried Chicken. Before it became its own exclusive chain, Kentucky Fried Chicken would lease the Colonel's deep-fry pressure cookers to restaurant. They were required to fry only chicken in them and had to buy bags of the Colonel's secret blend of eleven herbs & spices to batter the chicken with. If they got caught using the fryer for anything other than chicken or using any other batter, the fryer got taken away.

So you had all sorts of restaurants with the Colonel's chicken on the menu and most of those chickens came from local suppliers.

OK, I'm a bit out of the loop, not having had KFC for some decades, but how the heck could they stop using them??

I get the idea that the buckets must cost a premium for the franchisee, so they avoid using them. There's some weird reason like that. I ordered a family sized meal and it came in like five little boxes, and I felt actively cheated of the experience.

I meant I remembered the old graphics on the sides of the buckets. The newer graphics are more simplified and modern in style.

I also remember a great old restaurant called "Sambo's." It was named after one of the founding partners, Sam Battistone.

Unfortunately, "Sambo" became a racial slur back in the days of the Civil Rights movement because of an old children's book called "Little Black Sambo." The titular Sambo was an Indian child, not African, but he was often depicted like a minstrel show character with black skin, oversized red lips and wooly hair. In the story, Sambo has to run for his life to escape a group of pursuing tigers. He climbs a tree and taunts the tigers until they run around the tree so fast, they melt into golden delicious butter which Sambo scoops up and has on his pancakes.

It didn't help that Sambo's restaurants prominently featured illustrations from the book in their décor. I liked the place, though. Unlike most chain restaurants of the time, they went with a bright, airy Googie style of architecture & design. It was like having dinner at the Jetson's house.

By then, of course, the old illustrations of Little Black Sambo had been replaced by a light-skinned, blue-eyed little boy in a vest, turban, harem pants and curly-toed shoes. He was still foil to a hungry tiger, though.

I don't think any Sambo's restaurants are still around today.

I do know that Colonel Dixie's, whose mascot is an honest-to-God Confederate officer, is still around in Alabama.

My uncle-in-law's great uncle was the colonel. I can see the family similarities in regards to work ethic and personality. My uncle-in-law can be kind of a douche at times, but he is also very hard working and business minded.

I keep a photo of the Colonel on my wall. I believe in his ethic and I like his eccentricities. Bad for chickens, good for America.
