I think it's just more humane than burning the cows

Well, it's like the guy briefly said, the hair will grow back white, making it easier to see. If they brand them a little bit longer, the hair doesn't grow back at all, which is what they go for when the animal has white hair in the branding spot.

It's probably also a lot less painful, but the cows can't really tell us.
