I'm giving auto-five for Bourdain alone, but it's also nice to see a clear, well presented defense of a process that most folks who've never seen an actual animal rendered into foodstuffs (likely the vast majority of the American population) don't really understand (or would otherwise care about, if my hunch is right).

He's really kind of a douche about it though. He knows for a fact that much of foie gras production is pretty damn horrific. He knows this and he feels strongly enough about it to take an ethical stance on it - he would only ever buy from the more humane producers (like the one he toured), and hopes other chefs would do the same. *Then* he goes and makes this video, which whitewashes the whole issue, dismissing people who have the same concerns he does. It's cognitive dissonance in action, as it happens.

I can't tell if you're really crying just about ducks getting deepthroated so they can be made more delicious, especially in light of the morphological facts presented. (True stuff: many birds regularly swallow stones to aid in grinding up the food in their stomachs, what with the whole "lack of teeth" thing) Also, please go look up "cognitive dissonance" for future reference. You have internet, there's no excuse.

AB's just trying to get word out that "Hey not every company who makes a traditional but lately slandered food is a faceless bottom-line-driven hive of scumfuckery, you can actually purchase and consume it and not have to feel guilty about having done so if you look around okay?"

Holy shit, are you seriously just restating what I just said ... as a rebuttal to what I just said? Hey, maybe if I restate it again we can find out!!!:

Bourdain knows foie gras production is really fucked up in general. He doesn't say it in this clip, but he knows that. That is WHY he is showing us foie gras production how it *ought* to be done, from a reputable top-level farm that he personally buys from ... to show that the process does not have to be innately more horrific than any other large-scale animal slaughter facility (which you, and I, think are bad enough anyway). He is trying to pass the tour off as a rebuttal - to show the critics that they're wrong!!!! - but it's actually a *solution* to the problems that they've raised, which he has taken on board. Cognitive dissonance is a strange beast.

Well, now I'm even more confused. Are you just upset specifically about all this talk of foie gras because you're actually a duck?

Okay! Apparently we both agree about the typically brutal treatment etc. etc. It's just that, such complaints given in reaction to this particular video, addressing one particular facet of the overall situation, by a man who is aware of the problem, and which is full of well-tended animals and at least one answery whitecoat milling about in a pleasantly pastoral setting, just seems kinda... dissonant, if we wanna keep that dumb stone rolling. I understand why you're fired up about the issue, it just looks like you're aiming at the wrong target here.

...and maybe the wrong target audience, considering where we're posting.

5 stars for the lonely intellectual courting ritual of the poetv user. I'm thinking you both agree on about 90% of the topic, had some slight misunderstanding on one small part, and are slowly trying to work your way around to getting back to forgetting that the disagreement part was trivial.


Seriously, read that shit while listening to 'Don't stand so close to me.' It's golden.
