My guess is they were made from very fatty meat.

When heated, the fat melts out and the lean contracts closer together.

That's why you cut the edge of porkchops with a knife in sections prior to cooking, so that the chops won't warp and raise while in the pan.

All pepperoni slices will curl up like that if they aren't paper-thin. Some people prefer curled pepperoni because it's "traditional", as opposed to the thinly-sliced American-style.

I'm not a big fan of it myself, because the pepperonis turn into grease cups that congeal into orange fatty deposits as the pizza cools.
