I really doubt it's presence in the food supply. Extraction would be a lot of work to only get a small bit of the margins from store-brand vanilla ice cream.

This was also on an episode of Nathan For You, where he wants to make poop flavored frozen yogurt, which they were able to do. That still gets to me: we all know what poop smells like, and in the case of the vomit flavored Jelly Bellys, we probably all know what vomit tastes like, at least residually. But to get the taste of shit, not just the smell, officially right, you'd have to put an ad out for taste testers who have eaten their own or someone else's poop, right? I can't remember if the episode gets too far into that detail or not.. I was laughing too much to pay much attention to the science part.

Another interesting thing to consider is the vegetables like celery, artichokes, and a few others that many people are genetically disposed to interpret as "soap" taste. Personally I love the taste of both but know a couple of people with this gene and therefore can't stand them. I wonder if an extraction of either would induce the same soapy flavor in one person, and "regular" flavor in another.

The Current had a segment on the book The Dorito Effect which talks about the (inevitable) dark side to all these flavourings.

Definitely worth a listen.

The book is great too.

One thing it woke me to that I hadn't quite realized was just how flavorless the products of modern agriculture are -- which in turn makes things flavored with synthetic flavorings all the more appealing.

Chicken in particular is a kind of bloated franken-veal compared to what it used to be, 70 or so years ago.

When my Italian, small-farmer grandfather came to the US, he wouldn't eat American chicken because it freaked it him out.

Along those lines, I also recommend "Supernormal Stimuli" and "The End of Overeating" (which, despite the title, is about how food production and marketing has made processed food increasingly drug-like).
