The use would be in industrial circumstances where slicing the eggsicle provides the illusion of a uniform, aesthetically ideal egg. If you're cooking like a normal human being, however, you just slice up the egg for exactly the same effect without the complication of the apparatus involved. It's a neat trick but otherwise pointless.
