We used to use knives like that but heavier (like a decent machete, maybe 3/16" thick at the back of the blade) and maybe 6" shorter at my first job when I was 14, usually for slicing 50 pound cheese wheels (you'd have to heat the blade up on a hotplate for about 10 minutes first to get it through a romano) but also sometimes in a pinch for chopping the top off of the 5 gallon cans of olives.

Actually that's probably about the same thickness, but it has a lot more flex, ours didn't flex at all.
