Goat cheese makes everything better.
I made some goat cheese lasagna that killed people with deliciousness a couple months back.

I've been making omelets without butter since I was a kid. Just because I never had butter, not because I was a health nut. Olive oil makes an omelet vastly superior in health and taste to butter omelets.

Yes, Olive Oil + Omelet = Awesome. Particularly if you're making a Mediterranean-style omelet, which involves copious amounts of cheese and veggies oh god you bastards now I have to go to the gyro place down the street

I love this guy's technique for not burning the bottom of the omelette, which drastically changes the flavour if, like me, you've been having semi-burned omelettes all your life.
When I tried this the first time it came out very well, then I fucked it up a couple of times till I got it down properly. The oil needs to be quite hot before you pour the egg in, or it will all mix together and become a disgusting egg/oil soup. Also, two tablespoons oil seems excessive to me, I use just barely enough oil to cover the bottom of the pan.

I was actually kind of confused by the description. I've never made my eggs in butter. I guess that's the benefit of having had an Italian grandpa.

I've always used oil for my eggs rather than butter, but I've been doing omelettes for ages at work and home in a teflon pan. I wonder if the stainless steel makes much of a difference. I know it's a non-reactive metal, so I don't think it would too much....

Just get one of the bigger, high walled pans. We have one that has a ~10" flat bottom, and curved sides that are ~6" tall. It is by far our most frequently used pan.

I make a 3-egg omelette every single day for my breakfast. This guy's technique is sound. Pay attention to the spatula work, and follow that.
